I'm hoping to show my students the proper way to fabricate whole, locally caught fish. It is something that everyone, especially from this area, needs to know how to do.
I will demonstrate how to filet a whole fish, tell how to tell if the fish is fresh, and how to prepare the fillets using different techniques.
Hopefully, a lifetime of enjoying the bounty of the Gulf of Mexico by being able to break down a fish, prepare it, and teach someone else how to fabricate whole fish.
My Culinary 2 students are high achievers and many will have passed ServSafe Manager's Certification by the time we get to this curriculum. Some of my students are on the competition culinary team as well as the competitive baking team.
I'm guessing at the actual cost, as prices and availability fluctuate. If money is not all spent on the fish, I would like to fabricate shellfish and squid too.
