The goal of this project is to create a hands-on, inclusive learning experience for Exceptional Student Education (ESE) students by developing a salsa garden. Through planting, tending, and harvesting vegetables and herbs, students will gain practical life skills, reinforce academic concepts, and enhance their social and emotional well-being.
Our ESE students will actively participate in every stage of the garden’s development, from preparing soil and planting to harvesting and creating fresh salsa. The garden will include tomatoes, peppers, onions, cilantro, and other ingredients needed to make salsa. Lessons will incorporate science, math, and literacy while also fostering teamwork, responsibility, and self-confidence.
Activities will include:
• Researching and selecting appropriate plant varieties for Florida’s climate
• Planting and maintaining the garden
• Observing plant growth and documenting changes
• Measuring and recording data (growth rates, rainfall, temperature)
• Harvesting produce and preparing fresh salsa
• Discussing nutrition and healthy eating habits
• Engaging in reflection and journaling activities
The students will benefit both academically and socially. Science: plant life cycles, ecosystems.
Math: measurement, counting, data collection.
ELA: journaling, recipe reading, sequencing.
Social and Emotional Learning: Gardening promotes patience, responsibility, teamwork, and problem-solving. It also helps reduce anxiety and improves students’ sense of accomplishment.
Life Skills & Independence: Students learn about healthy eating, food preparation, and sustainability, giving them practical skills that can benefit them in the future.
Physical Activity & Well-being: Gardening encourages movement, fresh air, and engagement with nature, promoting overall health.
Self-Awareness & Self-Management: Students will develop confidence and perseverance as they nurture the garden.
Social Awareness & Relationship Skills: Students will work together, take turns, and develop empathy as they care for living things.
Responsible Decision-Making: They will practice problem-solving when addressing garden challenges like pests, weather, or plant health.
Funding will be used to purchase garden supplies, soil, plants, raised garden beds, gardening tools, and materials.
By implementing this project, we aim to create an engaging, hands-on learning experience that fosters academic growth, social development, and a love for nature and healthy living among our ESE students.
