Goal

Salmonellosis, shigellosis and trichinosis sound just as bad as the havoc they can cause on the human body if food is not prepared satisfactorily. The goal of this grant is to research and produce a poster in Culinary Art 1 for standard 02.0; Demonstrate and incorporate workplace safety procedures. My students will practice research, attention to details, creativity, time management, presentation and leadership skills while developing an FBI most wanted poster for Food Borne Illnesses (FBI).  

What will be done with my students

We offer our students a chance to learn a trade during their high school experience. Culinary Arts prepares my students for an entry-level position in a commercial kitchen. I instill in my students to be creative and create visually pleasing and good tasting food but most importantly - disease free food. I teach a standard on workplace safety procedures of which food borne illnesses are part of. I teach the students about sanitation, keeping the workplace vermin free and how to handle the food. My students have to take notes, highlight and be prepared to research in small groups an illness, such as salmonellosis, shigellosis or trichinosis. Food safety can quickly shut down kitchens if procedures are not being followed.


After I cover the basis of the standard during lecture, I assign students into groups. The groups get assigned a foodborne illness to research. They go on their phones to research their illness. A charging station is vital, especially for my students in periods later in the day when their phones may not be sufficiently charged to do research. They jot down their notes from the phone on a notepad to learn how to do note taking, marking their source of information. Each group then gets together with their teammates to compare notes and decide on where the illness is found, its symptoms and prevention.


The notes get compiled together using highlighter to decide what information is vital on the poster. Each group gets a poster assigned to them and free access to a variety of pens, markers, rulers, and sharpies. In order to make the poster pop, the students can cut out colorful letters from construction paper using a Cricut, thereby bringing STEM into the classroom.


The posters, once completed, are presented to the class and hung on the walls to remind students to practice and follow workplace procedures.  

Benefits to my students

Expected outcome is interesting, artistic, creative posters that showcase the standard 02.0; Demonstrate and incorporate workplace safety procedures. New and diverse markers and pens can be used across classes for colorful creation. The students get exposed to a new tool, Cricut, to cut out letters for the poster from construction paper.
